Recipe for Kanelsnurrer

I love baking and today I am sharing one of my favourite recipes with you.

It´s for Kanelsnurrer, Norwegian Cinnamon buns.


For the dough you´ll need:

  • 975 g flour
  • 500ml milk
  • 1 packet of dry yeast
  • 150 g sugar
  • 1 tsp. cardamom
  • 1/4 tsp salt
  • 1 egg
  • 150 g butter ( melted)

For the filling you´ll need:

  • 125 g butter ( room temperature)
  • 2 tbs cinnamon
  • 6 tbs brown sugar

To decorate:

  • One egg yolk
  • Nib sugar


For the dough mix all the dry ingredients together first , then add the wet ingredients and knead until your dough comes together. You might need to add a little bit more flour or milk if the dough doesn´t come together or is too wet.

Knead for about 10 minutes , then leave the dough to rise at a warm spot until it´s doubled in size.

Once the dough is risen it´s time to roll out your dough in a rectangular shape about 2mm thick. Make sure that the surface is well floured so it won´t stick.

Mix the ingredients for the filling and spread it out over the flattened dough and form a roll, then cut it into 5 cm thick pieces.

Now you have two options :

  • Leave them as they are
  • Braid them

Once you´re finished, transfer to a baking tray and let it rise again for ca.30 – 40 minutes.

Pre-heat your oven to 200 degrees (fan oven).

Once the Kanelsnurrer have risen for the second time, brush them with the egg yolk and sprinkle over the nib sugar.

Then bake them for 10-12 minutes or until golden brown.
