- 800ml milk
- 200g wheat bran
- 300g rye flour
4.handfull each of:
1 cube yeast/ 1 packet dry yeast
800g white flour
3 tbsp of rapeseed oil
1,2 and 3 will be your starter dough. Place them all into a mixing bowl/kitchen machine and mix until well combined. Leave to rest for 30 mins.
Meanwhile cook the barley, wheat germ, oats and linseeds with some water for about 10 minutes or until al dente. Set aside to let it cool.
Dissolve the yeast in 200ml of warm milk (about 38 degrees) add to the starter dough with the rapeseed oil and the white flour. Then add the cooked grains.
Knead until it´s all very well incorporated and let it rise until it´s doubled in size.
Then split the dough into three and let it rise again.
Bake in the oven, 225 degrees, around 50 minutes or until it sounds hollow.
